First thing's first I turned on the burner and heated up some cooking fat, specifically clarified butter. I bought it at Trader Joe's (it's kinda hard to find and I've never tried making my own) where it's sold as "Clarified Butter / ________"

Off to the side I'm soaking some chicken in a bit of lemon juice. By itself this is a terrible way to 'cook' chicken, but if you swap out the chicken for various seafoods you'd probably be making a form of what Latin American dish?

Running low on food-based trivia here, so let's just jump over to Ethiopia. In the Bible according to the Ethiopian Orthodox Church you will find most of the books of the traditional Orthodox Old and New Testaments as a well as a few others, one of which is named for a term from Leviticus. The term refers to a year (every fiftieth) in which sins and debts would be forgiven and slaves would be freed, among other things.
